Chocolate Waffle Cake – Easter Style!


Nat and I did a bit of Easter crafting we would like to share with you!

Let’s starts with the worlds easiest cake. What makes it so easy you ask? Well, we baked it in a waffle iron. No leveling required, and the waffle grooves fill with icing to make if extra sweet and delish!
WAFFLE CAKE 
What you need:
Waffle iron 
Duncan Hines chocolate cake mix 
Mini eggs (1-2 943g bags)
Fresh flowers 
Chocolate eggs 
1. Make cake batter as directed. 
2. Pour cake batter into waffle iron. Follow the directions of your waffle iron and use it the same way you would make waffles.
3. Stack the waffles with a thin layer of buttercream between each. We use a piping bag to keep the icing layer even.
4. In every second layer we added a bunch mini eggs in the waffle grooves and around the outside. 
5. To create the flower topper we used a 2″x 2″ piece of oasis with cling wrap on the bottom to keep it from touching the cake. Run the oasis under water until it’s fully absorbed but not sopping wet. 
6. Stick some fresh flowers in the oasis. We also mixed in some silk flowers because they are much easier to use and last longer. Michaels has the nicest silk flowers, but don’t forget to bring a coupon and check for flower sales because they’re pricey!
7. Once the cake is in place you can add few large chocolate eggs by simply resting them in the flowers.
Simple Icing
5 sticks unsalted butter, softened  
3 tablespoons of high ratio shortening
 9 cups icing sugar
 1 1/2 teaspoons pure vanilla extract (or almond extract if preferred)

Directions
  • Beat butter, shortening and 3 cups sugar with a mixer on medium speed until combined. Reduce speed to medium-low, and continue to beat, gradually adding remaining 6 cups sugar, 1 cup at a time. Raise speed to medium-high; add vanilla. Beat until pale and fluffy, about 3 minutes more.
